WHere is a home-style version of a beverage from the seasonal menu. It's a batch premix that's packed full of tastes of the Christmas time, rendering it ideal for your celebration. Any leftover syrup for brunch beverages, sweets, or to make more rounds of this cocktail.

To make the Citrus Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar
To make the Drink (makes 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Method
To prepare the Citrus Syrup: Put the listed items into a pot, bring to a light boil, mixing so the sugar melts. Next, turn off the burner allowing it to cool fully. Decant into an sterilised bottle, seal and store chilled, it can be stored for about a month.
For the Cocktail Base: Mix every liquids into a sizeable container, leave to sit for an hour, then filter it best through muslin, making it fully clarified.
For serving: Pour 85ml of the premix to a mixing glass filled with ice, gently stirring gently for one minute to cool it down. Pour into a frosted cocktail glass or equivalent, garnish with the cranberries and complete it by giving it a quick spritz with the mandarin essence over the drink.
